Chilorio is a popular Mexican stew that has its origin in the state of Sinaloa. Made from shredded pork with potatoes, and seasoned with a combination of pasilla chili and ancho chili that give it that slightly spicy flavor so characteristic. Afterwards, it is seasoned with salt and pepper and cumin and oregano are added.
